Watermelon-Cucumber Salad
½ watermelon, preferably seedless, cubed
1 cucumber, quartered (so cut coin-shaped slice into 4)
¾ cup fresh basil, chopped
½ cup cashews, crushed
½ cup olive oil
2 tbsp. balsamic vinegar
1 lemon, juiced
1 tsp. salt
Goat cheese, crumbled, to garnish
Cube watermelon, do NOT include peel. Chop cucumber (into coin-shaped slices then cut each slice into 4). Combine and set aside. Combine olive oil, balsamic vinegar, juice from 1 lemon, and salt to taste. Pour dressing mixture over chopped watermelon and cucumber. Mix. Sprinkle fresh, chopped basil and cashews overtop.
