Roasted Greek Chicken

  • 1 lb. chicken breast
  • 2 cups fresh spinach
  • 1 whole bulb garlic
  • 2 Roma tomatoes, sliced
  • Salt and Pepper
  • Olive Oil
  • Aluminum Foil

Directions

Preheat oven to 350*. Line your baking sheet with foil. Set aside.

To Roast Garlic and Tomatoes: Slice the whole top off your bulb of garlic, therefore exposing all the cloves (see picture.) Wrap the outside of your garlic bulb with foil. Place on foil-lined baking sheet. Next, slice tomatoes and place on baking sheet, alongside garlic. Drizzle about 1 tbsp. olive oil inside the garlic bulb (it will absorb in 30 seconds or so) and drizzle a 2nd tablespoon of olive oil over tomatoes. Season with salt and pepper. Roast and 350* for about 30-40 minutes. Remove from oven and let cool. [see Tips on how to omit this step]

Cook chicken however you prefer (I prefer my George Foreman... but you can throw your chicken in the oven with the vegetablea, however, it may need 15-20 minutes longer to cook all the way through.)

To Saute Spinach: In a small skillet, over medium-low heat, add olive oil and a couple cloves of roughly chopped, roasted garlic. [Your Roasted Garlic can be squeezed out of the bulb and will have the consistency of softened butter... mmm delicious!!] Add in your spinach and stir constantly until spinach leaves are wilted (about 2 minutes.) Remove from skillet onto paper towel-covered dish (to absorb oil).

To assemble your Greek Chicken: layer sautéed spinach and about 1-2 tbsp. feta cheese (per breast).

Increase heat of oven to broil (high). On a freshly foil-lined baking sheet, place layered-chicken breasts in oven and heat until cheese is melted (about 5-7 minutes).

Remove from oven, arrange roasted tomatoes on top of layered chicken and enjoy!

Serve over a bed of spinach with your favorite dressing OR with a side of Stovetop Asparagus or Quinoa Cakes (See Lamb chops with Quinoa Cakes and Stovetop Asparagus.)

Tips: This recipe is SO EASY as there is little work time. Roasting vegetable really brings out fantastic, rich flavors and I highly suggest it. However, totally omit that step for the quicker version and use fresh, crushed garlic when sautéing spinach. Further, layer tomatoes on chicken before you place in broiler to heat them through.
